One Broccoli Soup, Multiple Ways

Today I want to tell you about how to make a simple broccoli sauce …

The broth is amazing for many reasons: It is leafless, gluten-free, and without milk; they come together fast enough to justify even make it lunch; it can be a single pot if you have a sink blender; uses everything a stalk of broccoli, not just its flowers (do not throw!); and above all, it is very difficult. Like, almost a mistake.

My favorite way to enjoy it is the way I do lunch: stuffed with plain yogurt and fried onions. (Do you know what cans they sell at Trader Joe’s? heavy cream. Or if it was topped with croutons or shaved Parm or minced herbs (basil? Dill? Chives?) Or corn chips or crème fraîche or sunflower seeds. Or if you are thinking of mixing eyes or smoking paprika or ginger somewhere along the way.

And I know I’m putting you at risk for the real problem of paralysis choosing here, but you can also use this template for many vegetables – switching broccoli into butternut squash, cauliflower, carrots, asparagus, and even cabbage.

Pureed Broccoli Soup
Adding extra olive oil to the ends (obviously) makes the sauce soft and delicious, but you can skip it if you want something lighter. They make 4 small or 3 large serving.

2 tablespoons olive oil + 1/4 olive oil
1/2 medium onion, chopped
1 clove garlic, minced
kosher salt and fresh black pepper, to taste
red hot pepper, to taste
1 pounds broccoli, florets and stems (meta any painful patches from trees with a knife or peeler leaves)
4 cups broth (vegetables or chicken)

Add 2 tablespoons of olive oil to a regular skillet over medium heat and add onion, garlic, salt, pepper, and a line of red pepper. Cook until onions are soft, then add broccoli and sauce. Bring to a boil, then reduce to simmer, and cook until broccoli is very soft, about 6 to 8 minutes.

Turn off the heat, add 1/4 cup olive oil, and puree the broth using a whisk blender until silky and smooth. (If you are using a regular blender: Remove the broth from the heat and cool slightly. Add 1/4 olive oil, and puree in a blender until silky and smooth.

In the meantime you can choose your trip:

• Top with chopped Parm, croutons, and chives
• Top with green onions and sour cream or Greek yogurt
• Top with shredded cheddar, sour cream, and tortilla chips
• The top is a cement mixed with celiac oil
Add one teaspoon of white sweetened milk (you may want to dilute it with a little warm water to separate) and a teaspoon of soy sauce.
• Mix curry porridge with onion, then finish with coconut milk and squeeze the lime.

PS soup with friends and one Dorie Greenspan size fits “every cake”.
